Fruit and Nut Granola

With an array of fruit and nut granola on the market, it can be difficult to find your favourite. I have tried and tested many different brands and whilst they can be convenient and time saving, they are often very high in sugar.

Fertility Nutrition by Hannah has created this recipe as a go-to recipe for you to always have on hand.  Get yourself a large jar and always keep stocked up. Sometimes we will double up the recipe if we have family or friends visiting as it always go down very well! A simple mix of plain Greek or natural yoghurt with a scoop of the fruit and nut granola is just perfect.

Ingredients

Oats – Slow releasing carbohydrate, rich in fibre

Sunflower seeds ,pumpkin seeds, and almonds – providing fibre, protein, selenium, vitamin E, and much more.

Dried fruits – providing a good source of iron.

To ensure that the granola is crispy and subtly sweet, we use coconut oil and maple syrup. Male syrup and coconut oil also means that this recipe totally vegan friendly. You can replace the maple syrup with honey if you prefer. We just enjoy the rich flavour of maple more so.

Notes

Add the dried fruit after the granola has been baked. If you add the dried fruits during the cooking process, they might burn.

Make sure you give the granola a mix every 15 minutes or so. This ensures that the granola is evenly baked.

You can add whichever dried fruits that you like. We love to use organic cranberries and sultanas as well as papaya and apricots. Changing fruits with the seasons is always a nice touch.

You can make this without any of the added fruits and it makes a wonderful nut and seed granola. It is super versatile and you can enjoy it with fresh fruits and yoghurt. 

Leave to cool before consuming. As the granola cools down it crisps up. If you try it fresh from the oven, the nuts won’t taste quite right. Let it cool completely.

Let it cool completely before storing in an airtight container. If you jar it whilst it is warm, it may loose its crispiness.

Fruit and Nut Granola that is crunchy, slightly sweet and very nutty. It is rich in fibre with slow releasing energy properties. Enjoy with yoghurt, on a smoothie bowl or sprinkled over porridge. It is naturally vegan but can also be made gluten-free by simply using gluten-free oats.

Equipment

  • 1 Large bowl
  • 1 Weighing scales
  • 1 Spoon
  • 1 Baking tray
  • 1 Sheet of baking paper

Ingredients
  

  • 360g oats whole oats or quick-cook depending on the texture you like.
  • 115g almonds` chopped chunky
  • 30g sunflower seeds
  • 10g pumpkin seeds
  • 50g dried fruits your choice here
  • 30g banana chips crushed into small pieces
  • 50g coconut oil melted
  • 125g maple syrup

Instructions
 

  • Pre-heat oven to 120C
  • In a mixing bowl, mix together oats, nuts, seeds, maple syrup and melted coconut oil. Combine well.
  • Line a large baking tray with baking paper, then place your granola onto the tray.
  • Pop into the oven for 1hr 10 mins - give a good mix every 15 minutes.
  • Once timer is up, remove from the oven and allow to cool on the side before stirring through your dried fruits and banana chips.
  • Store in an airtight container.

Notes

Store in an airtight jar once cooled.
Enjoy with smoothies, porridge, yoghurt or milk.
